I recently had a mouthwatering chicken salad sandwich at Starbucks, and it reminded me that inspiration for delicious food can be found anywhere.

Apart from chicken, the key ingredients of Tarragon Chicken Salad that made this sandwich so tasty were sweetened dried cranberries and tarragon.

Tarragon, especially the French variety, has a unique aroma with hints of anise or licorice. Although we don’t use it frequently, I grew some last year and only used it sparingly throughout the season. However, it truly complements the flavor of chicken.

The addition of dried cranberries brings a touch of sweetness to the chicken salad, while the lemon juice adds a perfect amount of acidity to enhance all the flavors.

What Is Tarragon Chicken Salad?

Tarragon, a fragrant herb belonging to the sunflower family, offers a delightful blend of aromas and flavors including licorice, eucalyptus, vanilla, and pepper. It is commonly paired with fish, as seen in dishes like Fish Cakes With Tarragon Mayo, and poultry, such as Herb Roasted Chicken Thighs and Potatoes. Additionally, it plays a key role in the classic Béarnaise Sauce, adding its unique seasoning.

When using dried tarragon as a substitute for fresh tarragon in a recipe, it’s important to note that the flavors become more concentrated. To achieve the desired taste, use a 1:3 ratio. For example, if the recipe calls for 1 tablespoon of fresh tarragon, substitute it with 1 teaspoon of dried tarragon.

Ingredients

  • 2 cups finely chopped, cooked chicken meat
  • 1/4 cup dried cranberries, finely chopped
  • 1 rib celery, finely chopped
  • 1 teaspoon lemon juice
  • 1/4 cup mayonnaise
  • 1 to 2 teaspoons dried tarragon or 1 to 2 tablespoons chopped fresh tarragon
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. Make the dressing:

    In a large bowl mix the mayonnaise, lemon juice, and tarragon.

  2. Add the remaining ingredients:

    Add the chicken, dried cranberries, and celery. Add salt and pepper to taste.

    Serve with lettuce for a simple salad, in a tomato that has been cut open for a stuffed tomato, or with slices of bread for a chicken salad sandwich.
